It’s no secret…I looove cupcakes. They might just be the perfect dessert – nice and small, tons of different flavors…you get the idea. So on my latest trip to Home Goods in Jacksonville I found this fantastic cookbook called Easy Cupcakes! At $5.99 I couldn’t pass it up and sat down to make my first batch last night. I chose the Frosted Peanut Butter Cupcakes to appease the family. I think they were a big hit!
*Edit* So, I was running out the door as I posted this and today realized that I forgot to post the actual recipe. So for those who are interested (and you should be interested, these things are tasty!) here it is:
Ingredients:
4 tbsp butter, softened
generous 1 1/8 cups firmly packed brown sugar
generous 1/3 cup crunchy peanut butter
2 eggs, lightly beaten
1 tsp vanilla extract
1 5/8 cups all-purpose flour
2 tsp baking powder
generous 1/3 cup milk
for frosting:
1 cup full-fat soft cream cheese
2 tbsp butter, softened
2 cups confectioners’ sugar
Preheat oven to 350 degrees. Put cupcakes liners in muffin pan, or double-layer paper liners on a baking sheet. (when I made these I filled them to the top and it only made 11 instead of 16. What can I say, I don’t like a skimpy cupcake!)
Put the butter, sugar, and peanut butter in a bowl and beat together for 1-2 minutes. Gradually add the eggs, beating well after each addition, then add the vanilla extract. Sift in the flour and baking powder and then, using a metal spoon, fold them into the mixture, alternating with the milk. Spoon the batter into the paper liners.
Bake the cupcakes in preheated oven for 25 minutes, or until well risen and golden brown. Transfer to a wire rack and let cool.
To make the frosting, put the cream cheese and butter in a large bowl and, using an electric handheld mixer, beat together until smooth. Sift the confectioners’ sugar into the mixture, then beat together until well mixed.
When the cupakes are room temperature, spread the frosting on top of each cupcakes, swirling it with a round-bladed knife. Store the cupakes in the fridge until ready to serve.
*from my experience, I don’t put them in fridge, it dries them out. I just put them in a large ziploc on the counter. Also, use a little more brown sugar and peanut butter than you think. I will on my next go around….which is tonight!*
